Group F&B Director Sani Resort & Ikos Resorts
We are looking for a seasoned culinarian and restaurant expert focusing on the design, development and ongoing support of bespoke culinary and restaurant concepts.
The role will be based in Halkidiki, Greece. The Group F&B Director will develop and facilitate the areas of culinary operations, food service design, space planning, menu development, pre-opening training, operations support and financial performance of more than 80 F&B outlets as well as projects such as the renowned Sani Gourmet etc
Concept Design, Development and Implementation – oversees the design of concept-focused culinary programs
Restaurant and Bar Openings – leads the development, preparation and deployment of culinary-focused restaurant and bar launch materials
Restaurant and Bar Operations – manages all culinary programs, operations and concept sustainment activities
Is responsible for the overall F&B strategy of the group
Researches trends and competition. Conducts forward-thinking research to understand market needs.
Identifies industry trends, and competitive situations and opportunities that are relevant to existing and future restaurant and bar projects.
Coordinates with external contactors/consultants on culinary strategy and standards.
Together with Hotel Leaders establishes and ensures adherence to core work processes that drive innovation and enhances Sani & Ikos brands.
Leads the design of industry-leading restaurants, bars and other F&B related projects that are relevant within the market, generate buzz, and drive revenue.
Creates and contributes to concept documents, mood boards and other materials to support concept development.
Manages and assists with outlets’ success metrics and tracks progress on multiple projects, providing regular updates to stakeholders to ensure projects are completed on time and within agreed upon parameters
Hotel management school / University diploma
Proven record through all levels of the F&B department
At least 5 years’ experience as an F&B Director in a resort operation
International experience preferably
Strong knowledge of the competitive landscape in the Food and Beverage segment and must be able to remain current with industry trends
Proven expertise in hands-on opening of hotel and / or independent restaurants
Knowledge of OS&E and current trends in service ware and equipment design
Trained in HAACP preferred
Financial management skills
Effective influence, negotiation, conflict management, and consensus building skills
Eligible to work in the EU
